93- Porros Leeks
Well matured leeks are boiled with a pinch of salt in water and oil. They are stewed in oil and the best kind of broth and served.

Leeks
Clean and trim your leeks. Get all the dirt out of the ends. I cut it into 2-3 inch pieces and slice in half. More white than green is usual. Boil them in a pot of salted water with a touch of olive oil until mostly done. Remove from the water and lay in a pan with olive oil covering the bottom and broth to cover the leeks. Simmer until done.
